Vegetable Noodles

INGREDIENTS

Serves 8

1 packet of egg noodles.
1 red, 1 green and 1 yellow pepper (deseeded and chopped).
1 courgette (chopped).
1 aubergine (chopped).
1 stem ginger (peeled and chopped).
2 red chillies (deseeded and chopped).
1 stem lemon grass (finely chopped).
bulb garlic (peeled and chopped).
1 small bunch coriander (washed and chopped).
1 bottle sweet chilli sauce.
Vegetable oil.

METHOD

1 Fry the ginger, garlic, lemon grass and chilli.

2 Cook the noodles in boiling water until soft and drain in a colander.

3 While the noodles are cooking, add the peppers to the frying pan with the garlic etc.

4 When softened add in the courgettes and aubergines. Add the noodles and stir in with the bottle of sweet chilli sauce.

5 Before serving, season with salt and pepper and sprinkle with the chopped coriander.

Serve..
